leekLeeks are frequently infested with insects and must be checked.

Leek presents an extra difficulty in checking: The insects which are found in leek are often between the thin layers of the vegetable. Consequently, these insects will not be visible—unless these layers are separated from each other.

1. Cut off the green leaves and discard them.

2. Cut off 1/4 inch from the bottom of the leek.

3. Cut open the circular stem, height-wise, and separate the layers of leek.

4. Direct a stream of water at each layer, on both sides, making sure that every spot is covered.

While doing this, rub the leek with your fingers.

Once this is done, no inspection is necessary.
